Cupcakes with Peaches and Whipped Cream



                                                                                                                                                            Baking time: 25 mins

Products for 12 cupcakes:

400gr sliced peaches from a can (or fresh)
115g melted butter
1 1/4 dl sugar 
2 slightly whipped eggs
2dl flour
Frosting:
1½ dl whipped cream




Set your oven on 180°C. Prepare 12 cupcake papers. Leave the peaches to drain and save the juice. Prepare 12 small peach pieces and chop finely the rest. Stir the butter with the sugar light and fluffy in a large bowl. Add the eggs one at a time and whisk between each. Add the flour and mix well. Add the chopped peaches and 1 tbs of the juice you saved earlier. Fill the cupcake papers with the mixture using a spoon. Bake for 25 minutes or until they get golden brown top. When out let the cupcakes rest for 15-20 minutes to cool. For the decoration: Whip the cream very well and spread it on top of the cakes using a knife (Make sure the cupcakes are cool to prevent the cream from melting). At last, place a peach peace on each cake as a decoration.
